Baked Fish with Zucchini

Light, fresh, and full of goodness, this Baked Fish with Zucchini pairs tender oven-baked fish with sautéed zucchini and crunchy pine nuts, finished with a drizzle of extra virgin olive oil. It’s a simple, nutritious meal that’s perfect for a healthy lunch or dinner.

Ingredients

115g salmon (raw weight)

2 Medium Zucchini

Pine nuts

Extra virgin olive oil for drizzling

Instructions

Method:

  1. Bake the fish in the oven for 10-15 minutes on 180 degrees.
  2. The time will vary depending on the type of fish so keep an eye on it
  3. While fish is baking, peel, then grate the zucchini
  4. Lightly fry zucchini in a pan to cook a little. You can add a bit of water inf needed. Drain water when it’s cooked.
  5. When fish is cooked, cover it with zucchini and sprinkle with pinenuts.
  6. Top with extra virgin olive oil and Himalayan Sea salt.
