You’ve probably seen an Acai Bowl on the breakfast menu at your favourite cafe.  Acai (pronounced ah-sigh-ee) is often referred to as a superfood, full of antioxidants and said to be anti-inflammatory. The acai berry looks a bit like a blueberry and has gained popularity by being blended into a smoothie and served with fresh fruit, nuts and muesli. 

As we gear up for the Live Fearless Challenge – and with warmer weather on the way – we thought you might like to try making your own Acai Bowl. 

Acai Bowl

Ingredients

  • 200g frozen acai puree (available at most supermarkets) 
  • ½ cup natural or vanilla yoghurt 
  • ¾ cup milk (cow’s milk and nut milk work well) 
  • 1 banana (frozen) 
  • ½ cup strawberries (frozen) 
  • ½ cup blueberries (frozen) 
  • Fresh berries to top 
  • ½ cup toasted muesli 

Note: Acai Bowls work with all sorts of fruit – try kiwi, watermelon, mango and pineapple. You can also add other toppings like shaved coconut, dark chocolate nibs and nuts of your choice. 

As always, if any of these ingredients are flare foods for you, please omit them or replace them with an alternative item.

Method

  1. Place the acai, yoghurt and milk in a blender and puree until smooth.   
  1. Gradually add the frozen fruit, blending in small batches to ensure a lump-free consistency. It should be thick and smooth. 
  1. Pour the smoothie into a bowl. Top with fresh fruit and muesli. 
  1. Eat immediately* 

*You can freeze the acai smoothie mix, but it is best enjoyed freshly made
