Vegan Chocolate Brownies

As always: if any of these ingredients are flare foods for you, please omit them or replace them with an alternative item. 

Ingredients

¼ cup avocado

¼ olive oil

1 cup all-purpose flour

½ cup cocoa powder

½ cup granulated sugar

1 tsp baking soda

½ tsp salt

¾ cup water

2 tsp lemon juice

1 cup dark chocolate chips

½ cup dark chocolate chips (for topping)

30 minutes

This recipe makes 12 brownies

Method

Preheat oven to 180°C and grease an 8-inch pan

Mash the avocado and oil until smooth

Beat flour, cocoa powder, sugar, baking soda, salt, water and lemon juice.  Combine until you have a smooth batter

Add the chocolate chips to the mix and stir well

Pour the batter into a well-greased baking tray and sprinkle with remaining chocolate chips on top

Bake in the oven for 15 – 20 minutes (it might take a little longer depending on your oven)

Tips

The brownies are ready when the mixture has risen and is coming away from the side of the pan. The mixture should be moist with a few crumbs but not runny.

Leave brownies in the pan to cool for about 10 – 15 minutes.  Transfer to wire tray, cut into squares.
