Test – Lemon herb chicken with chilled potatoes

A simple, nourishing meal for CDED Phase 1, featuring lean chicken, chilled potatoes and fresh vegetables, designed to be gentle on the gut and easy to prepare.

Ingredients

Scale
  • 150 to 200g chicken breast
  • 1 to 2 potatoes (peeled, cooked, then cooled and chilled)
  • 1 tomato or a few cherry tomatoes
  • ½ cucumber, peeled
  • 1 tablespoon olive oil
  • Fresh herbs (parsley or basil)
  • Lemon juice
  • Salt and pepper

Instructions

  1. Cook chicken breast (grill, bake or pan-cook with a little olive oil).
  2. Season with salt, pepper, herbs and lemon juice.
  3. Boil potatoes, let them cool fully, then refrigerate before eating.
    • This step is important because Phase 1 specifies cooled potatoes.
  4. Slice cucumber and tomato.
  5. Plate chicken with chilled potatoes and salad.
  6. Drizzle olive oil and extra lemon juice over the top.
