TestSpinach omelette

A simple savoury breakfast made with eggs and spinach, designed for CDED Phase 1 using gentle, easy-to-digest ingredients.

Ingredients

Scale

2 eggs

1 small handful fresh spinach (about 1 cup uncooked)

1 teaspoon olive oil

Pinch of salt

Instructions

Lightly whisk the eggs in a bowl.

Heat olive oil in a small pan over low to medium heat.

Add spinach and cook briefly until just wilted.

Pour in the eggs and cook gently, allowing the omelette to set slowly.

Fold in half and cook until just firm but still soft inside.

Serve immediately.

Notes

Keep texture soft. Overcooking makes it harder to tolerate.

Portion control matters. This aligns with daily egg allowance in Phase 1.

You could optionally pair with a small serve of rice if you want to make it more substantial.
